Pot Roast and Make Ahead Mashed Potatoes

Hey girls! This month I decided to do a pot roast. Thaw it overnight and then stick it in the crock pot for 8hours or so. I put the onion soup mix over it and then a little water maybe 1/4cup. Then the potatoes you can just thaw and put in a dish and bake at 350 for like 30-45 minutes. They are really yummy without anything extra. When roast is done it should just shred very nicely. Chicken Enchilada Casserole

Hello my friends. As many of you know, I grew up deep in the heart of Texas where authentic Mexican food is found everywhere. My family does not appreciate the authenticity of enchiladas so I have to make them "Gringo" style. Each of you will get a 9X13 pan of Enchiladas but they are made with Flour tortillas. I know in the past we have had problems with the foil pans, but I remember Marianne made enchiladas and they cooked up fine for me. So just thaw the casserole out and put it in a 350 degree oven for 20-25 minutes, just till the cheese is melted and it is heated all the way through. here is the recipe...

1 package of 8 regular size tortillas
1 can cream of mushroom soup
1 can cream of chicken soup
1 can green chilies
1 (small) bunch of green onions (half of a large bunch from Walmart :)
Chicken...(either half of a whole chicken or a couple of large chicken breasts....cooked)
Cheese
Black olives (optional...my family doesn't like them)

Mix soups, chilies, diced green onions. Spread a little of the mixture in the bottom of 9x13 inch pan. Then add diced chicken to the mixture. Spread generous amount of mixture on each tortilla roll them up and put them in the pan. I cut the curved ends off so they fit horizontally across the short side of the pan (confusing?) I can usually get eight in there if I squish them in. I usually have left over mixture that i spread on top of tortillas and then cover in cheese and olives if you want. Cook at 350 for 20-25 minutes till heated throught. Yummy with a cold crisp salad, corn or even steamed brocolli.

See I told you there is nothing authentic about this recipe. I just try and keep my family happy. Usually most kids like this meal, even the real picky ones. I think I am the only one with picky eaters!!!

Beef Chalupas

Thaw and reaheat chalupa mix (you may have to add a little water when reheating). Beans are very tender so try not to "mush" it when stiring. Serve on a tortilla like a soft taco or burrito, garnishing with cheese, lettuce, tomatoes, sour cream, salsa or whatever you prefer. I made this recipe very mild for the kids so you may want to add a little "kick" if you prefer spicy flavors.


CHALUPAS (Amy Jensen's recipe from May 2008 Enrichment)
4 pound roast (she used pork then but I used beef this time)
3 cups dry beans (I used Navy but you can use any kind)
2 cloves garlic
2 Tbs. chili powder
1 Tbs. cumin
1 tsp. oregano
1 small can green chilies
1 Tbs. salt

Place all ingredients (including dry beans, no soaking required) in a crockpot. Cover with water and cook for 6 + hours on low. Shred meat and return to crock pot for a short while longer. Serves a small army!

Italian Sausage & Basil Pasta Bake

Cook pasta according to package directions. Thaw and heat sauce. Then mix together, put in a casserole dish and cover with mozzarella cheese. Place under broiler just long enough for cheese to brown. About 5 - 10 mins. (watch it carefully so it doesn't burn) Serve with garlic bread and veggies or salad. I hope your family loves it!!

Sauce:

2 T. Olive oil
1 lb. Italian Sausage
6 - 8 Basil Leaves (chopped to a fine shred)
1 26 oz. Jar Marinara Sauce (I used Classico or you can use homeade)
1/4 C. Water
1 tsp. salt
1/2 tsp. pepper
pinch of sugar

Brown sausage in olive oil. Mix in all remaining ingredients and let simmer for at least 15 mins.

Homemade Macaroni & Cheese

Hopefully this is one that your kids will enjoy! My sister's family loves this recipe and I've made it once before. I just made my portion and it worked!!! I would recommend thawing overnight in the refrigerator or putting it out the morning of until it is thawed out.

2 1/2 c. elbow macaroni
1/3 c. margarine
1/2 c. onion
1 1/2 t. salt
1/2 t. pepper
1/3 c. flour
3 c. milk
2 c. grated cheddar cheese

Cook macaroni for 10 minutes or until tender. Preheat oven to 375. In medium saucepan, melt margarine. Add onions, salt and pepper. Saute onions until tender. Blend in flour. Stir in milk slowly and bring mixture to a boil. Stir in cheese. Heat until cheese is melted. Add macaroni. Spoon into ungreased 2 qt. casserole dish or 9x13 pan. Top with bread crumbs. Bake uncovered 25-30 minutes.

I'll be giving you the sauce already made, so you'll have to thaw the sauce and mix it with the cooked macaroni, put it in a pan, sprinkle the bread crumbs on top, then bake as directed. Enjoy!

Mediterranean Chicken

This might be a little out of the comfort zone for some people (I'm thinking Jared!) but I think if people give it a try they will love it! It is basically a red pasta sauce with a bunch of veggies and chicken. You will notice in the recipe below that you usually add the artichoke hearts at the end but I just put them in now for convenience sake. Just transfer the contents of the bag to an 9x13 pan, bake at 350--30 minutes with foil then 30 minutes without foil. You will want to sprinkle it with Parm cheese before serving. Sorry in this heat that you will have to use your ovens for this one!

MEDITERRANEAN CHICKEN
Cut up chicken breasts
½ pound mushrooms, sliced
3 green onions, chopped
2 cloves garlic, minced
2 tablespoons olive oil
8-ounce can tomato sauce
6-ounce can tomato paste
¾ cup apple juice
½ cup black olives, sliced
1/2 teaspoon salt
1 teaspoon oregano
1 teaspoon basil
¼ teaspoon pepper
6-ounce jar marinated artichoke hearts, drained
2 tablespoons Parmesan cheese, grated
Pasta of your choice

Cut chicken breasts into large pieces and place in a large baking dish. Combine the ingredients beginning with the mushrooms through the pepper for the sauce. Spoon the sauce over the chicken and cover with foil. Bake at 350 degrees for 30 minutes. Remove the foil and bake an additional 30 minutes. Remove from oven and arrange the artichoke hearts around the chicken and sprinkle with cheese. Cover with foil and let sit for 5 minutes. Serve over pasta.

BBQ pork chops

I hope you don't mind me doing these again. I just really love BBQ pork chops! You will just need to thaw and grill! I am also giving you a box of Rice Pilaf that I think is good with chops.

All you do is:
Place desired amount of pork chops in bag. Pour in 1 to 1 1/2 cups of Sweet baby rays BBQ sauce. And freeze!

Baking change on Meatloaf

I would recommend thawing the meatloaf overnight and then baking it in a loaf pan of your own. I baked my meatloaf in the tin pan and after an hour it had barely cooked. So, if you put it in your own pan you shouldn't have a problem cooking it at 350 for 40 minutes, put on the topping and bake another 10 minutes. Enjoy! Sorry about this change, I'm really not a fan of those baking pans they don't seem to conduct heat very well.

Country Style Pork Chops

When I got these chops out of the package I realized they were quite thin so this will be a very fast and easy meal to cook. Thaw out the meat, get a skillet ready with a little butter or oil in the bottom over medium heat. Put the flour mixture in a pie pan or plate with edges. Take each pork chop out without drying it off and put it right into the flour mixture. I like to make sure it gets as much flour as possible. I pan fry these chops for about 5 minutes on each side over medium heat. I have never tried Pam, but it might be a healthier alternative. (but butter is so good!!!) I like to do butter and a little oil, that way the butter doesn't get to brown. Enjoy...

Suggestions on Tami's meal

First, I would like to thank Tami for the yummy dinner. I had put the rolls in a baking dish and baked them for 30 minutes at 350. I kept having to add time so I put the temperature at 400. I have a similar recipe and the chicken rolls bake at 400 for 20 minutes. When I went to pull out the rolls, they weren't cooked where they were touching so I put them on a cookie sheet and baked them some more. So, long story short...I would brake the rolls apart and bake them on a cookie sheet at 400 for 20-30 minutes. If someone tries this, post it and let us know how it turns out. Thanks Taimi!

Chicken Pockets

Just place frozen pockets in a casserole dish sprayed with Pam and bake for about 25-35 minutes at 350° or until bubbly and lightly golden. This is the first time I've frozen this meal so if you end up needing to cook it a little longer, just let the rest of us know! Thanks!!

Melt-in-Your-Mouth Blueberry Pancakes

Once in a while, our family likes to have breakfast for dinner. So this month (as part of the "miscellaneous" category) I am doing blueberry pancakes, bacon and eggs.

I will give you the dry ingredients for the pancakes and frozen blueberries. I will also give everyone a package of bacon and eggs to go with your pancakes. The only thing that can't be frozen, of course, are the eggs. So, I hope you will be able to use them soon.

PANCAKE DIRECTIONS:

Add the following to the dry mixture:

1 C. milk
2 Eggs
1 T. Lemon Juice
1 tsp. Vanilla

Stir until well blended. Gently fold in blueberries (optional).

I hope your family enjoys this meal whether you have it for dinner... or breakfast!

Meat Loaf

Make sure to thaw the meat loaf overnight before baking. I hope you enjoy this, it's a family favorite! I serve with baked potatoes and a veggie.

1 c. bread crumbs
2 eggs
1/3 c. water
1/4 c. chopped onion
1/2 t. sage
1 T. parsley flakes
1/2 t. salt
1/4 t. pepper
1 lb. ground beef
Mix all ingredients and press into 9x9 or loaf pan. Bake 45 minutes @ 350 degrees. Skim off any oil and put on sauce and bake another 10 minutes.

Topping:
1/4 c. brown sugar
1/4 c. catsup
1 T. mustard
1 T. Worcestershire sauce
pinch of nutmeg

Bow Ties with Chicken and Peas

I will have the mixture for you to pour over the bow ties and the cheese to top it off. You will just need to cook the pasta.
Here is the recipe:
2 c. chicken
10-oz pkg. frozen peas,
10 1/2 oz. can cream of chicken soup
1/2 c. low fat milk
1/2 tsp. dried rosemary or thyme
1/4 tsp. pepper
1/2 c. grafted Parmesan cheese
1 pkg. dry Good Seasons Italian dressing
8 oz bow tie pasta.

In a saucepan over medium heat, add cooked chicken, peas, soup, milk, rosemary or thyme, pepper and dry Italian seasoning. Cook until bubbly adn hot. pour over drained pasta; add parmesan cheese, mix and serve.

Tostada Recipe

I am embarrased to tell everyone how easy this meal is. I guess the simplicity is part of the reason why I love it so much. So, here goes...

BEEF- Brown and drain 1 lb. ground beef. Add 1/4 cup water and 1 packet of Lipton Onion Soup Mix. Stir and let simmer for about 10 min.

BEANS- 1 can Rosarita Refried Beans (the brand DOES make a difference I think) Add about a tablespoon of butter or margarine (to thin them a little) and a dash of garlic powder. Add salt and pepper to taste.

(When I make tostadas at home, I buy corn tortillas and fry them myself, but the ones I gave everyone were already fried because some people don't like working with hot grease.)

That's it!! SO EASY! I can usually have this meal ready from start to finish in about 15 - 20 mins if I cut up my toppings while the beef is simmering.

P.S.~ I really do like to make homemade refried beans which are even yummier. I used canned this time because it was faster... homeade beans take all day to cook. If you would like to know how to make them homemade, let me know!

Switch-a-roo

I went ahead and rotated our names to show our assignments for this month. I can't wait to see everyone next week! I hope no one cares, but I switched places with Aften. I was supposed to do beef this month, but since I did it last month in her place, I just switched our names. Aften - I hope you still participate with us... and I hope you don't mind the change!! We miss you! I will rotate the list regularly from now on (unless someone else needs to switch)... even if Aften is no longer able to play with us. :(

Girls!!!

How can I ever thank you for generously giving up one of your meals. I feel so blessed to have friends like you. I just hope that I can be as unselfish and service oriented as you all. You great examples of that....ALL of you. I feel trapped and cooped up in my house, so even venturing out to Bashas is hard. So thank you again! Beef and Bean Tostadas

I chose this meal because my family LOVES it and it is very kid-friendly. We have a lot of fun with it. All you need to do is warm up the beans and meat and then build your own tostadas! You can mix the beans and meat together or leave them seperate. Also, if you put the tostada shells in a 350 degree oven for about 5 minutes they will crisp up nicely and taste really good. I usually place all the toppings (cheese, lettuce, tomatoes, sour cream, guacamole, olives, etc.) out and let my kids make their own tostadas. They love it! I hope you enjoy!

Apple Glazed Pork Roast

Hi Ladies! I must confess, I am experimenting as I changed this recipe to work for a freezer meal (since raw apples don't freeze well) so I apologize if it doesn't work quite the same! The recipe below explains both ways. Any feedback or suggestions would be great!

For your meal... thaw roast and apple mixture in fridge overnight. Rub roast with salt and pepper and then brown the outside for just a few minutes in fry pan to seal in the flavors. Place in crock pot sprayed with Pam and cover with apple mixture and 1/4 cup apple cider. Cook on low all day, aprox 8-10 hours or until done.

2 lb. pork roast
3 apples (I used Pink Lady)
1/4 cup apple juice/apple cider
1/2 tsp. ginger
pinch cinnamon
3 Tbs. brown sugar
Salt and Pepper to taste.

DIRECTIONS When Freezing the meal:
Peel, core and slice apples. Cook with about 2 cups of water on the stove for approx 20-25 minutes or until soft. Remove from heat and stir in ginger, cinnamon, brown sugar. Cool and freeze for a later date. Then follow directions above.
DIRECTIONS When Starting Fresh:
Peel, core and slice apples. Place on bottom of sprayed crock pot. Place slightly browned roast on top. Mix apple juice, sugar and seasonings and spoon over top.

Great Chicken Marinade

I got this recipe off of allrecipes.com and our family really likes it. Hopefully yours will too. I gave each family quite a bit of chicken (3.5 pounds!) so it might even suit you for two meals. Feel free to eat some for dinner, use it on a salad, in a stir fry, etc. We usually just grill it with some veggies. I used my meat tenderizer that pokes holes in the meat so hopefully it will be flavorful and moist.

Great Chicken Marinade
5 boneless chicken breasts
1/3 c. olive oil
1/3 c. lemon juice
1 (.7 oz.) package Italian-style dressing mix

Chicken Parmesan Subs (Rachel Ray)

2 cloves garlic, minced
¼ c. olive oil
1 can diced tomatoes (14.5 oz.)
salt, pepper, oregano to taste
2 chicken breasts chopped
6 sub rolls
2 c. mozzarella cheese
Heat olive oil in saucepan, add crushed garlic. Cook till golden. Stir in chopped tomatoes and season with salt, pepper, and oregano. Add raw chicken pieces, cook through.
Spread halved hoagie rolls with butter and broil till crunchy. Rub bread with garlic cloves. (optional) Top in the following order: grated mozzarella, chicken & sauce, mozzarella. Broil until cheese is melted and bubbly. Yum! This is a fast quick meal. I hope you enjoy!

Pork Chalupa Roast

I am making Pork Chalupa Roast. It is shredded pork in the crock pot for several hours with lots of yummy spices, and pinto beans. We put it in tortillas and add cheese and sour cream if you like. It is a huge hit in our house and even my kids love it. Enjoy!
2-3 lb pork roas
1 lb. pinto beans
1/2 tsp. minced garlic (3 garlic cloves)
1/2 tsp. minced onion
2 tbs. chili powder
1 tsp. cumin
1 tsp. oregeno
1tbs. salt
1 can green chilis
fill with water
cook in crock pot 8-10 hours

Amy- wait to add the sour cream?

I just made Amy's meal tonight which was great! The only question I have is should you wait to add the sour cream until the end before serving? I added it at the beginning and it kind of balled up instead of mixing in. I have had other recipes with sour cream in the crock pot and you add it at the end. Anyone have an answer?

Jane's meal gets an A++++++++

If you haven't had Jane's meal yet, get ready for some REALLY GREAT Beef and Broccoli. When I served it to my kids they said, "Yuck, I don't like broccoli!!!" I told them they haven't tried this dinner before. I told them how Jane had made it and that Sam and Nate LOVED it. I told them they thought is was sugar meat. (The things we say to get kids to eat!) So, Jeffrey reluctantly took a bite and said, "Wow, this is REALLY GOOD". About 2 minutes later he was asking for more!!! It took Kyle awhile to give it a try, but once he did, his plate was gone too. As for Chloe, I think you all know she doesn't eat. I ate way too much myself just because it tasted so good and Scott asked if I could get the recipe. So Jane, PLEASE pass on the recipe!!! (If you haven't already.) Thanks Jane!!!

Add a little more cornstarch...

I gave you each baggies with 2 t. cornstarch (plus some sesame seeds) to thicken the sauce at the end of cooking. I made the meal tonight, however, and realized you will probably want to add an additional 2 t. cornstarch (4 t. in all) to make the sauce just right. Also, I forgot to take out my meal to thaw so I just thawed it in the sink with some warm water. It didn't take too long--from start to dinner was only about 30 minutes.

Four Cheese Lasagne

Sorry for delay! Lots going on here and my meals took forever to freeze! No need to thaw, just loosen the foil and bake at 350° for about 40 minutes. Remove foil and cook another 5-15 minutes or until bubbly and all the cheese is fully melted. Enjoy with garlic bread and salad on the side!

Directions: When I make one lasagne, I usually make a large pan worth, plus I have some leftover, so all amounts listed below are very approximate.

1 lb. or less ground beef
1/2 chopped onion
minced garlic
salt and pepper
1 box or less of lasagne noodles (3 noodles wide per layer)
2 jars pasta sauce
Italian seasoning
1 block or less shredded cheddar cheese
1 block or less shredded mozzarella cheese
grated parmesan cheese
1 tub cottage cheese

1. Brown ground beef with chopped onion and minced garlic. Salt and Pepper to taste.
2. Cook lasagne noodles about 5-6 minutes and then separate to cool.
3. Add ground beef, onions, garlic and Italian seasoning to pasta sauce.
4. Mix cheddar and mozerella cheese together in separate bowl.
5. Spray pan and cover bottom with a thin layer of sauce. Layer the remaining ingredients as follows: row of noodles, meat and sauce mixture, cheese mixture sprinkled, couple sprinkles of cottage cheese, a little parmesan cheese, another layer of noodles, etc.
6 Finish off the top with just a thin layer of sauce and plenty of parmesan, cheddar and mozzarella cheese. Enjoy!

Beef Stew

We call this stew Skier's stew, only because you can put it in the oven and when you get back from skiing it is ready to eat. Weird, I know! I don't know what to call it here in the desert.

1 lb stew meat
4 or 5 potatoes
handful of baby carrots
chopped celery
1 packet lipton onion soup mix
1 small can of tomato paste
1 can of cream of mushroom soup and 2 can fulls of water
1 beef bouillon cube

Brown stew meat in a little oil until browned. Then put it in a crockpot or roasting pan with all the other ingredients. It will take about 3-4 hours till carrots and potatoes are fork tender. If I cook it in the oven, I will put it at 300 or 325.

It will all be cooked through in freezer bags. I say let it thaw and then put it in a oven safe cassorole dish and warm it through. This meat that I put in the stew is so tender I don't know if it will stay in stew chunks or if it will fall apart, either way, there is plenty of beef in there and it will be delicious.

Sesame Beef and Broccoli

I've never frozen broccoli before but I did my best to follow internet advice. I blanched the broccoli for 4 minutes then put it in an ice bath then bagged it. You may have to steam it but I'm going to try just adding it to the stir fry at the end since it is already partially cooked.

Sesame Beef and Broccoli
1 pound round steak, cut into strips
1/2 c. soy sauce
1/2 c. white sugar
1/2 c. vegetable oil
3 cloves garlic, minced
3 green onions, chopped
1 lb. broccoli
2 tablespoons sesame seeds
2 teaspoons cornstarch

DIRECTIONS
Mix soy sauce, sugar, oil, garlic, and onions in a large bowl. Set aside. Cut steak into strips and add to bowl. Cover and refrigerate overnight, or at least 30 minutes. Cook in wok or frying pan until brown, about 5 minutes. Steam broccoli. Next add the broccoli, sesame seeds and cornstarch and cook for additional 2 minutes. Serve over rice or egg noodles.

manicotti

Since the stuffed shells were such a big hit I decided to make something of the same this time around. I made manicotti. I will give you the box of shells and a bag of sauce and a bag of the cheese mixture. All you need to do is thaw the two bags day of cooking. Then cook shells according to directions. Then scoop cheese mixture into manicotti shells or cut tip of bag and squeeze into shells since they are tube like. Then cover with sauce and cook in oven for 20 min. or so. I like to sprinkle a little mozz on top and cover with tinfoil so it doesn't get hard. And enjoy. My kids love this meal. Serve with salad and rolls and you are set. Also, the package of shells is more than my family can eat in one meal. So consider that when cooking. I usually make 2 each for Tony and I and one for each kiddo.

Manicotti or Stuffed shells with cheese
4 cups ricotta cheese
2 cups shredded mozz
1/2 cup grated parmesan
2 eggs
1 tbsp. chopped fresh parsley ( or dried)
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. nutmeg
Shells
Sauce
Cover with foil bake till bubbly

Chicken Tacos

I tried out a new recipe last night with my kids and it was such a huge hit! I was in shock the rest of the night. It is diffenetly getting a gold star next to it!
I'm going to give you the following:
tacos
4 chicken breasts
jar of mild salsa
1 sour cream
sharp cheddar cheese

The day you want to make this you throw the chicken breasts (I even did mine frozen) salsa and sour cream in the crockpot and cook on high for 3-4 hours. I then removed just the chicken breasts and shredded them. I didn't pour all the remaining mixture on top it just looked like to much so I just mixed enough in to coat it and make it alittle creamy. Then I spooned it into the tacos and put some sharp cheddar cheese on top. My kids loved this you guys. Hobbs is the pickiest eater and he was the first one done! I also served fruit cocktail on the side and it was great! I am not pre-cooking it because I think the sour cream will come out weird. And it is an easy enough recipe that you can just quick throw it together that day. I hope you like it! I also only used 3 chicken breasts and it was plenty but for the bigger families I thought one more chicken breasts would be good.

Cream of Celery with pork tenderloin

Hello all. I made a easy recipe that Amy suggested in her last Pork BBQ entry. It is pork tenderloin cooked in a crock pot with cream of celery soup. We tried it out last night and I decided it needed an additional can of cream of celery soup (which I will give you) added to it to make it creamier and some salt and pepper to taste. I served it over rice and we put on green onions, Mandarin oranges, tomatoes, cheddar cheese and chow mien noodles. It is like Hawaiian Haystacks but with pork. I will be the first to critique it and say I think I would have liked it better with cream of chicken, the meat tends to stay clomped together so you kind of have to mix it in with the rice, and it is a little on the salty side because I think cream of celery is more salty. Who knows really, maybe it's just me. Anyway, live and learn. I hope you enjoy it, even for just one try!
